Sunday buns...cinnamon and my own!

So I've mentioned this is a previous post, but I'm engaged. WHOO HOO!! I met a wonderful man who supports me, encourages me to go for my dreams and loves me unconditionally. 

He also has 4 little kids. 

And when I tell people, most say something along the lines of, "Wow...are you sure? How do you do it? You must be a really strong person to marry a man with all that baggage!"

Well they can take those comments and shove em where the sun don't shine. I never even thought twice about what I was doing. I met his kids on our 3rd date (which was me coming over to watch a movie and hang out at the house) and I instantly loved them. And what's more, they instantly loved me back and were so excited to see their dad happy. 

So yes, I DO know what I'm doing and I love my life! I especially love waking up Sunday mornings on our weekends with them to make them breakfast. Lately, it's been turkey bacon and cinnamon buns (reduced fat of course). And as always, I want to eat them, but can't. So I decided to create a #porncakesundays stack to satisfy my food craving.


OHHHHH YEAHHHHHHH GENIUS STATUS RIGHT HERE PEOPLE!!!!!!! This is a must-try recipe for sure. I'm pretty sure I'll be having these every morning this week and I'm not even kidding. 

Cinnamon Bun Pancakes with Cinnamon Spread and Cream Cheese Icing

Pancakes
20g whole wheat flour
6.5g ground flaxseed
20g vanilla protein powder (cinnamon protein would work well too!)
80g canned pumpkin
3 egg whites

Cinnamon Spread
lots of cinnamon (go crazy!)
1/8 tsp vanilla
1 stevia packet
water to desired consistancy

Cream Cheese Icing
30g fat free cream cheese
1 stevia packet
1/8 tsp vanilla
1/8 tsp butter extract
1 tbsp unsweetened almond milk

Mix cream cheese icing and pour into a snack or sandwich-sized baggy, then set aside.
Mix pancakes up, and cook over medium heat.
Mix cinnamon spread in a little bowl and spread on top of each pancake.(You could also just mix this into the pancake batter but I liked it on top so I could really taste it!)
Squeeze icing all over your pancakes however you wish. (Squeeze out as much as you can to make sure you get all that icing goodness!!)

Crap...just writing this is making me hungry for tomorrow's breakfast. Heck...I may even make it for dinner! Breakfast for dinner is pretty much the most awesome thing anyway. 

So we go from one set of "buns" to another- mine! 

I'm happy to say I'm about 8.5 weeks out from The Arnold Classic, and I was just thrilled with my progress pictures to my coach this morning- especially with my back relaxed pose.

Dayum, just look at that symmetry.

Everything is just coming together so well and I couldn't be more excited. My strength still hasn't dropped- actually I hit PR's on my squat, bench and deadlift this past week. Yes, sometimes my energy is a bit low, but overall I feel fantastic. This is nothing like my last two preps. 

Now all I need is a tan LOL!!
